Lavender Lemon Spirals


Are you getting tired of the same old muffins or scones? Looking to add a little zest to your next brunchy get-together? Well, look no further because we've got the perfect recipe for you - Lavender Lemon Spirals! Now I have to be honest: we don't do a lot of sugar here on the farm, but every once in a while you try a recipe that's just fun, and if enough people ask about it, well you've just gotta put it out there! 

What You'll Need:

To start this whimsical treat, gather these ingredients: 

  • 2 sheets puff pastry, chilled but not frozen
  • 1 cup sugar
  • 1 teaspoon dried culinary lavender
  • 1 teaspoon lemon zest
  • A pinch of salt
  • 2 tablespoons butter, melted


How to Make Them:

1. Begin by Preheating oven to 400F degrees and greasing 2 standard muffin pans. Combine sugar, salt, lavender and lemon zest in a food processor, and pulse until lavender is finely chopped.

2. Sprinkle sugar mixture onto a cutting board or clean countertop surface. Lay one sheet of puff pastry over the sprinkled mixture, pressing in with a rolling pin.

3. Brush melted butter over puff pastry and sprinkle 1/3 cup of the sugar mixture, pressing in with the rolling pin. Roll pastry up tightly into a log, and using a sharp knife, cut into 8 equal slices. 

4. Place slices cut-side up in muffin pan, sprinkle with the sugar mixture. Repeat with second pastry sheet. Chill in freezer for 10-15 minutes.

5. Bake for 25 minutes, or until the buns are lightly golden. While hot, carefully remove buns from muffin pans and lay on a cooling rack.
